Two new summer favourites for you to try, had both tonight.
- corn on the cob, still in its husks, cooked slowly on a griddle pan, turned every five minutes or so until ready. Remove husks, toss in some olive oil, season with salt and squeeze half a lime over it. Eat while warm. You could boil the corn as normal but this way is even better.
- tomato salad. Get a punnet of tomatoes from Lidyl, they're about £1.50 for the mixed variety. Cut them into small pieces, dice half a red onion and half a red pepper add to the tomatoes along with the seeds from half a pomegranate.
Crush a clove of garlic to a paste with some salt, add white wine vinegar, olive oil and pomegranate molasses - available at TESCO. Toss the tomatoes, peppers,onion and pomeganate with this dressing and leave for a while.
Serve with crusty bread and lots of red wine.
