I like the idea mooted by Alec Salmond that Scotland should market itself as a place of midwinter Bacchinalia with a prolonged festival stretching from St Andrews Day to Burns Night with hogmonay as the centrepiece.
The way the Irish marketed St Paddy's day should be an inspiration.
Speaking of Pub's with criminal connections I noticed tonight that Canarvon Bar (in which you could get a pie for 20p in the early nineties!) is now named after Oscar Slatter.
